Almost all these grapes come from old replanted vines, which are unique in that that they are autochthonous species, as phylloxera never reached this region.
Almost all the vines are of the tempranillo variety, which is one of the best suited to this land.We also have a small cabernet sauvignon vine for that special touch that characterises our Brizo wine.
The grapes are harvested by hand, and the bunches placed in plastic crates with closed bottoms to prevent contamination with earth when dragged along the ground.
The best time for harvest is chosen according to the balance between sugar, volatile acidity, pH, free nitrogens, antocyanidins and polyphenols.
